Zucchini and cherries tomatoes tart

INGREDIENTS

  • 3 zucchinis
  • 2 small onions
  • 3 eggs
  • 1 cup cherry tomatoes
  • 0.5 cup cream
  • 0.5 cup milk
  • 1 teaspoon oregano (to taste)
  • 0.5 cup grated cheese for melting
  • 3 tablespoons Goya Extra Virgin Olive Oil
  • 1 teaspoon pepper and salt

PREPARATION

Peel the onions and cut them into very fine strips. Fry in a pan with oil and season to taste. Set aside.

Wash the zucchinis and cut them into thin slices. Cook them the same way as the onion.

Preheat the oven to 350ºF.

In a bowl, beat the eggs with the cream, milk, oregano to taste and a little salt.

Add the zucchini and onion to the mixture along with the cherry tomatoes, sliced. Pour into a baking tin and sprinkle the grated cheese on top.

Bake for 30 minutes so that the tart sets and the cheese browns. Once cooked, remove from the oven and leave to rest for 10 minutes before slicing
