INGREDIENTS

  • 2 tablespoons Goya Extra Virgin Olive Oil
  • 1 clove of garlic, chopped
  • 1 pack of fresh spinach (1 and a half cups)
  • 4 organic eggs
  • 1 cup grated cheese
  • 0.25 teaspoon salt and pepper
  • 2 tablespoons light cream (optional)

PREPARATION

Cook the spinach. Once it has boiled, drain it.

Chop the garlic and add to a pan with the oil. Sauté the spinach, remove and set aside. Mix the spinach with the beaten eggs, the light cream and half a cup of grated cheese.

After mixing all the ingredients, pour the mixture into the muffin molds being used.

Bake the muffins in the oven preheated to 350ºF for 20 minutes.

After this time, remove the tray from the oven and decorate to taste with mozzarella.
