Homemade cookie vanilla ice cream sandwich

  • For the ice cream:
  • 2 eggs
  • 0.75 cup sugar
  • 2 cups cream
  • 1 cup whole milk
  • 2 teaspoon vanilla essence
  • 1 tablespoon cinnamon
  • For the cookies:
  • 1 cup Light Flavor Olive Oil
  • 1.7 oz. brown sugar
  • 1.7 oz. white sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 5.3 oz. chocolate chips
  • 5.3 oz. flour
  • 0.25 teaspoon salt
  • 0.5 teaspoon baking soda

PREPARATION

First prepare the ice cream. To do so, beat the egg white until they are stiff peaks. Next, add the yolks and beat until obtaining a spongy texture. Little by little, add and beat the sugar. Beat and add the rest of the sugar.

Next add the cream, milk, vanilla and cinnamon, beating until they are mixed.

Transfer the mixture to an ice cream maker and follow the manufacturer’s instructions. We can also put it in the freezer and mix it every half hour for three hours to obtain the creamy texture of ice cream.

While the ice cream is in the freezer, prepare the cookies. First, beat the two types of sugar with the Light flavor olive oil until obtaining a cream. Add the egg and keep beating until well mixed. Flavor with the vanilla essence.

Next, add the chocolate chips and mix until well distributed. Sieve the flour with the baking soda and salt, and add to the mixture, mixing all ingredients well.

Flour a baking tray. Pour the cookie dough out in teaspoonfuls, which will flatten into a round shape as they cook. Bake until starting to brown slightly.

Remove from the oven and leave on the baking tray.

Place the cookies on a surface and assemble the sandwiches by putting a tablespoon of ice cream on one cookie and covering it with another.
