First we need to make the dough for our galette. In a food processor, mix flour, sugar and salt. Also add GOYA® Light Flavor Olive Oil and blend.
Add the cold milk and continue blending until all the ingredients are well combined. It is important that the dough has a soft texture.
Remove the dough from the mixer and leave to rest in the fridge for at least 1 hour.
Meanwhile, we can prepare the filling. In a bowl, place the sliced peaches along with the honey, cinnamon and vanilla. Mix well.
Next, sprinkle the almond flour over the chilled, rolled out dough, leaving about 2 inches around the edge.
Now place the peaches on the almond flour and fold the edges of the dough inwards to cover part of the filling. Put the galette in the freezer for 30 minutes to help it maintain its shape when we bake it.
Preheat the oven to 400F.
Take the galette out the freezer and brush the edges with beaten egg.
Before placing in the oven, dust with sugar.
Bake the galette for 30-35 minutes. Remove from the oven and allow to cool.
