Spinach walnut penne

INGREDIENTS

  • 1 cup cream cheese
  • 1 cup vegetable stock
  • 14 oz. penne pasta
  • 14 oz. fresh spinach
  • 1 clove of garlic
  • 2.8 oz. chopped walnuts
  • 3 tablespoons Unico Extra Virgin Olive Oil
  • 0.5 cup grated parmesan cheese
  • 1 teaspoon salt and pepper

PREPARATION

Boil the penne pasta following the packaging instructions. Once cooked, drain, rinse with cold water and set aside.

Chop the spinach and sauté with the chopped garlic in a pan with three tablespoons of Único Extra Virgin Olive Oil. Season.

Beat the cream cheese with the vegetable stock and grated cheese.

Next add the spinach and half the walnuts to the mixture.

Heat the cream in a pan and add the pasta. Season with salt and pepper.

Serve hot with the remaining walnuts sprinkled on top.
