Cod with tomato

INGREDIENTS

SERVINGS: 4
  • 4 cod fillets
  • 1 onion
  • 2 cloves of garlic
  • 1 lb ripe plum tomatoes
  • salt and pepper to taste
  • 4 tbsp GOYA ® Unico Extra Virgin Olive Oil
  • 1 glass white cooking wine

PREPARATION

Peel and chop the garlic and onion.

Add a splash of GOYA® Unico Extra Virgin Olive Oil to a frying pan on medium heat and when it is hot add the garlic and onion.

Cook until the garlic is golden and the onion starts to go transparent.

Remove from the pan with a slotted spoon and place on one side.

Using the same oil, place the cod fillets in the pan, skin down.

Cook the fillets for around 6-8 minutes on each side and put to one side.

Add 2 tbsp of Goya ® Unico Extra Virgin Olive Oil to a saucepan on medium heat, and when it is hot, add the cubed tomatoes and white wine. Season to taste. Season to taste.

Leave to cook for around 30 minutes and then add the garlic and onion and mix together.

Serve by pouring the tomato sauce onto the plate and then placing the cod fillet on top. You You can also pour a little of the tomato sauce on top. ¡Buen provecho!
